Air Fryer Jacket Potato

This jacket potato is super crispy on the outside and tender and buttery on the inside. Stuffed with a creamy, cheesy, buttery filling and salty pops of bacon. No fuss, and so easy??!

Ingredients:

3 potatoes
OKI Premium Sunflower Oil
200g bacon (chopped into small batons)
50g unsalted butter
½ cup cream cheese
100ml milk
Green onion
Shredded mozzarella cheese
Salt
Black pepper

Cooking Instructions

1. Prick the potatoes all over with a fork, then brush them with OKI Premium Sunflower Oil.

2. Bake the potatoes at 200°C for 60 minutes, or until they can be easily pierced with a knife.

3. Pan-fry the bacon until crispy and fragrant.

4. Slice the baked potatoes lengthwise, but not all the way through. Scoop out the flesh, leaving about a 0.7cm layer of potato inside the skin.

5. In a mixing bowl, mash the scooped-out potato flesh with a fork. Add shredded mozzarella cheese, green onion, bacon, cream cheese, butter, milk, salt, and pepper. Mix until well combined.

6. Stuff the mixture back into the potato skins, top with additional shredded mozzarella cheese and bacon, then air fry for about 15 minutes, or until the cheese is melted and golden.

7. Serve immediately, while hot, and garnish with extra green onion. Enjoy!
